Banana Oatmeal Pancakes

- 2 ripe bananas*
- 1/2 a cup of oatmeal*
- 2 eggs*
- 1 teaspoon of baking powder (optional: will make pancakes fluffier)
- A dash of cinnamon to taste
- Optional toppings: pile fresh fruit* on top or spread a thin layer of peanut butter* into between the stack of pancakes.
*WIC approved ingredients
Directions:
- Peel the banana and mash in a mixing bowl with the egg.
- Add oatmeal and cinnamon to the mixing bowl and stir thoroughly
- Heat a small pan over medium heat and grease lightly.
- Pour about a quarter of the mixture onto a heated pan.
- Cook pancake on each side until lightly browned (about 4 minutes)
- Serve with fresh fruit or peanut butter on top.
